Broccoli and bean soup

This delicious soup is full of goodness with broccoli as the main ingredient! Broccoli is rich in folate, vitamin C and a unique antioxidant compound called sulphoraphane. Sulphoraphane assists our body cells to detoxify by giving a helping hand to phase 2 liver detoxification.

Ingredients

2 onions

4 cloves garlic

Pinch of turmeric and cumin

1 litre chicken stock

1 medium potato

500g broccoli florets

400g (can) of white beans (drained)

Method

Sauté the onion, garlic and spices in a little oil; add the potato and broccoli (chopped) with the stock and simmer for 15 – 20 minutes. Puree the soup and serve with fresh chilli (great winter warmer) sprinkled on top and toasted sprouted bread with tahini.
