Simple Mexican Quinoa Salad

Quinoa is gluten-free, high in protein also high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and has many beneficial antioxidants.  Its versatile and delicious too!


2 cups cooked quinoa

1 can black beans

1 red capsicum cut into tiny pieces (I like the bullhorn)

1 cup cucumber cut into tiny pieces

1 cup tomato cut into tiny pieces

1 cup of corn

2 tbsp chives

handful of sultanas


1 small avocado

Juice of 1/2 lime (or more)

1/2 cup of salsa of your liking

Blend together and add to salad, or if you are lazy, just cut up the avocado and add all to other ingredients

You can add cos lettuce, cumin (I love cumin) and pepitas for some crunch, enjoy!

This is a lot, you might have to half the ingredients as a side dish.
